A Hug in the Middle Brownie Bites!



I came up with this recipe yesterday. I was in the mood for something sweet and chocolaty. I am pretty proud of how this turned out. My whole family DEVOURED them.. I went to grab one an hour after I made them and the whole plate was gone.



Yummy chewy brownie on the outside, and delicious melted Hershey hug in the middle.







Yes I know .. it isn't the "cleanest" job I have ever done.. sorry



This should make 24 if you are using your average mini muffin tin.
Ingredients:

  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 24 Hersheys hugs
Instructions:
  1. Preheat oven to 350°.
  2. Mix all ingredients except for Hersheys hugs together. Mix until very well incorporated. (I know this probably isn't the proper way.,. sorry)
  3. Grease your mini muffin tin
  4. Fill each spot up almost to the top with your brownie mix. I put the brownie mix in a large ziplock bag and then cut the corner off to squeeze it in. It made it much easier to get the proportions right. I originally put too much in each section.. so be careful to not over fill them.
  5. Then simply place a Hersheys hug on top! As these bake them will "swallow" up the hug so it ends up in the middle.. hence the name of this recipe
  6. Bake for 18-20 minutes in the center of your oven. Let them cool completely before you take them out of the muffin tin. This was another huge mistake I made the first time. They will split in half if you try to pull them out too early. But once they are cool... enjoy the chocolaty awesomeness!

Cheesy Knot Rolls

I served these delicious cheesy knot rolls with corned beef and cabbage. Soft and Chewy Chocolate Chip Cookies

Today was one of those days where I just felt like I needed a freakin' chocolate chip cookie. After doing a bunch of research on what makes the best chocolate chip cookie.. and seeing about a million recipes... I came up with this deliciousness. They were getting eaten as I was setting them out to cool, I doubt there will be any left for me by the time I am done typing this. So I am going to hurry and get to the good stuff!
