Yummy Homemade Mac & Cheese

Yummy Homemade Mac & Cheese that even my monsters love!





I found a very basic recipe for Mac & Cheese and then adjusted it to my own taste and the tastes of my monsters. (monster daddy and monster boy.. both picky in different ways)

Ingredients:

  • 1/2 stick butter
  • 3 Tbsp all purpose flour 
  • 2 1/2 cups milk (I used 2%.. but I don't think it would matter that much)
  • 3 cups shredded sharp cheddar
  • Salt and Pepper (I used 1-2 tsp of each. But you can use however you much you want for your taste)
  • 1/2 pound elbow macaroni
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan
  • 1/4 stick melted butter
Instructions:
  1. Bring a pot of water to a boil for your macaroni noodles (it will boil faster if you put a lid on the pot). You can start with step no.2 but put the pasta in the water as soon as it starts to boil. When pasta is done cooking, strain it and set aside until sauce is done.
  2. Melt the 1/2 stick of butter in a saucepan (med-low heat). Once melted add your 3 Tbsp of flour and cook for 3 minutes stirring with a whisk constantly. Then add in your milk and bring the sauce to a boil, whisking constantly. Once its to a boil simmer for 3 minutes (or until it starts to thicken), whisking occasionally. 
  3. Once your sauce is thick add in your cheese, salt, and pepper. Once that is all melted and goey and delicious looking, add it to your macaroni noodles and mix it all together.
  4. Place the macaroni into a greased baking dish or into individual ramekins. (I have made it both ways)
  5. Mix together your 1 cup of breadcrumbs, 1/2 cup grated parmesan, and 1/4 stick melted butter. Once you have made this, sprinkle it on top of your macaroni. (make sure its evenly spread)
  6. Bake at 400° for 18-20 minutes or until its bubbly and golden.

Corned Beef and Cabbage

Well, its St. Patricks day... so I decided to try my hand at making corned beef and cabbage. I have never made it before but I was very very pleasently surprised with how it turned out. Corned beef is one of my husbands absolute favorite foods, and he says the way I cooked it was the best he has ever had. I also liked it, especially for my first time ever eating it. Meaty Deep Dish Pizza

Tonight I was thinking PIZZA! Its the weekend, me and my husband had some episodes of Master Chef to catch up on.. so whats better than pizza?! As you can see in this picture.. there was some dough hanging over the edges.. I cut it off. This is what it looked like cut off so I decided to fold it down so the pie would look prettier.
