Cheesy & Spicy Grilled Cajun Chicken


This is the recipe for the super yummy cajun chicken that I had with the roasted mashed potatoes. This chicken is nice and spicy, but is toned down a little with the cheese on top.

So.. lets get down to business!

Makes about 5 servings if each person has 2 pieces of chicken (yes yes I know in the picture there are 4 pieces on the plate.. I didn't finish it all because I was stuffed like a turkey)







Ingredients:

  • 10 thawed out chicken tenderloins
  • 1 Tbsp olive oil
  • 2 Tbsp Cajun seasoning
  • 1 tsp sea salt
  • 1 cup shredded mozzarella cheese
Instructions:
  1. Take your thawed out chicken and place it in a bowl. Add your olive oil, Cajun seasoning, and salt to the bowl and toss/mix (whateva) until the chicken is nicely coated with the seasonings.
  2. Now cook on the grill... Everyone has their different techniques to using the grill. I just spray mine with a little non stick spray and cook them until they are done. I like to use a meat thermometer to check them so I don't have to constantly be cutting into them. I would say it took about 5-7 minutes for mine to be completely cooked (about 3 minutes on each side). But each grill is different, so make sure you check them often to make sure they are not over or under cooked.
  3. Once they are almost done, you will want to sprinkle a little of your cheese on top. Close the top of the grill so the cheese gets melty nice and fast.

Corned Beef and Cabbage

Well, its St. Patricks day... so I decided to try my hand at making corned beef and cabbage. I have never made it before but I was very very pleasently surprised with how it turned out. Vincent eating a warhead

Ok... so I know I haven't posted on here in a while. I have been crazy crazy busy this month. I have dressed up in Halloween costumes on 6-7 different occasions along with 2 kids. And let me tell ya.. it takes all the energy out of you. This year my son FINALLY was a Hobbit and my girlie pie was a fairy princess! ANYWAYS...
