Super Delicious Peanut Butter Cookies!

Ok now first off I have to say that this is not MY recipe. It is one I found on pinterest. It is by far my favorite peanut butter cookie recipe I have tried. The cookie dough doesn’t stay firm enough to press in the fork marks.. BUT they spread out and get huge and they are still nice and chewy without being gooey. I found the original recipe here http://www.momtastic.com/cooking-recipes/dessert/164457-classic-peanut-butter-cookies
Now.. on this website it looks like she was able to get the fork marks.. so I am not sure what I am doing that is so different.. maybe it is that I just dump all the ingredients in a bowl at the same time and don’t do dry and wet separate at first.. but oh well… this is how I do it :)
Ingredients:
  • 2 cups flour
  • 1/2 tsp baking soda or maybe a tini bit more… which might be why mine spread out more
  • 1/4 tsp salt
  • 1 1/4 cup firmly packed brown sugar
  • 1 1/4 cup white sugar
  • 1 cup softened butter (I do the “no no" and slightly soften in the microwave just until its a little tender but not melty)
  • 3 large eggs
  • 1 cup of creamy or crunchy peanut butter. I like crunchy.. and my son actually likes it too even though it has the chunks of peanuts in them.
  • 2 tsp vanilla extract
And as far as “instructions" go I dump all the ingredients in a mixing bowl and just mix it up! The oven needs to be preheated to 350°.. so you might want to go ahead and do that.
Then just put some blops (my own fancy word) of the cookie dough on a cookie sheet and keep them spaced at least an inch and a half apart because the “blops" double in size because of how much they spread. I only put 6 cookies on a cookie sheet because when I tried more it kinda spilled over the edge.
Once you have your cookie dough on the cookie sheet place in the oven and cook for about 12 minutes or until they are golden brown. They might still look a tini bit puffy when you take them out of the oven but that is ok. Once they start to cook they flatten out. And with these cookies you definitely want to wait until they have cooled a little bit to put them on a wire rack or wax paper.. just so they don’t split in half due to their size.
I love these because I usually already have all the ingredients to make them at home.

Cheesy & Spicy Grilled Cajun Chicken

This is the recipe for the super yummy cajun chicken that I had with the roasted mashed potatoes. This chicken is nice and spicy, but is toned down a little with the cheese on top. So.. lets get down to business! Makes about 5 servings if each person has 2 pieces of chicken (yes yes I know in the picture there are 4 pieces on the plate.. I didn't finish it all because I was stuffed like a turkey) Ingredients: 10 thawed out chicken tenderloins 1 Tbsp olive oil 2 Tbsp Cajun seasoning 1 tsp sea salt 1 cup shredded mozzarella cheese Instructions: Take your thawed out chicken and place it in a bowl. Add your olive oil, Cajun seasoning, and salt to the bowl and toss/mix (whateva) until the chicken is nicely coated with the seasonings. Now cook on the grill... Everyone has their different techniques to using the grill. I just spray mine with a little non stick spray and cook them until they are done. I like to use a meat thermometer to check them s...
