Super Amazing Roasted Mashed Potatoes



Tonight I knew I was making something with corn.. I love corn. And what goes better with corn than mashed potatoes?! I love eating a bite of mashed potatoes and corn all in one go. I have an amazing recipe for roasted potatoes.. and I thought to myself.. "hmmm what if I skinned them and then mashed them" and holy moly.. they turned out AMAZING!!! (imagine me saying "amazing" in an opera voice.. cause that's what I just did)

YUM! Roasted Mashed Potatoes paired up with some sweet corn, and Cheesy Spicy Cajun Chicken (separate recipe)


Anyways.. Here is the super yummy recipe for my roasted mashed potatoes!

Makes about 2-3 servings (very easy to double or tripple the recipe)
Ingredients:

  • 2 large potatoes
  • 2 Tbsp olive oil
  • 2 tsp sea salt
  • 1 tsp ground or freshly cracked black pepper
  • 1 tsp garlic powder
  • 2 Tbsp butter (used after they are baked)
Instructions:
  1. Peel, rinse, and chop your potatoes in to cubes. (I would say about an inch)
  2. Put your cut up potatoes in a bowl and add your olive oil, salt, pepper, and garlic powder. Mix well and place on a baking sheet sprayed with non stick spray. I also line my baking pans with tin foil.. MUCH easier clean up.
  3. Bake at 350° for 30 minutes.
  4. Once they are done cooking, let them rest for about 5-10 minutes.
  5. Take a pan and start melting your butter over the stove (about med to med-low heat) Add all of your potatoes and just start smushing them. I am not sure what the kitchen tool is called for that.. but the one I am using in the picture works amazing. I just kept on smushing them until they were nice and soft! Of course they arent going to be 100% smooth because of the slightly chewy (and amazing) baked edges.

Corned Beef and Cabbage

Well, its St. Patricks day... so I decided to try my hand at making corned beef and cabbage. I have never made it before but I was very very pleasently surprised with how it turned out. Meaty Deep Dish Pizza

Tonight I was thinking PIZZA! Its the weekend, me and my husband had some episodes of Master Chef to catch up on.. so whats better than pizza?! As you can see in this picture.. there was some dough hanging over the edges.. I cut it off. This is what it looked like cut off so I decided to fold it down so the pie would look prettier.
