Vanilla Cupcakes with Chocolate Frosting!



I made these about a week ago and I forgot that I took pictures! This was my very first attempt at making homemade cupcakes without a cake mix from a box. And I am going to be honest.. they were pretty freaking amazing.

Now.. enough talk.. lets get to the sweet goodness!
I got the original recipe for the cupcakes here http://www.food.com/recipe/amy-sedariss-vanilla-cupcakes-181181?scaleto=24&mode=null&st=true . I added a little more vanilla extract and it turned out amazing.



Ingredients for cupcake:
• 1 ¾ cups granulated sugar
• ¾ cups softened butter
• 2 eggs
• 2 ½ tsp vanilla extract
• ½ tsp salt
• 2 ½ tsp baking powder
• 2 ½ cups all purpose flour
• 1 ¼ cups milk

Ingredients for icing:
• 2 ¾ cups powdered sugar
• 6 Tbsp cocoa powder
• 6 Tbsp unsalted room temperature butter
• 5 Tbsp whole milk
• 1 tsp vanilla extract



Instructions for Cake:

  1. In a mixing bowl cream together the sugar, butter, eggs, and vanilla extract. 
  2. In a large bowl mix together your salt, baking powder, and flour. 
  3. Once your butter sugar mixture is nice and creamy rotate between adding a little flour and a little milk. Do this until all your flour and milk have been added.
  4. I baked mine in a mini muffin tin at 375° for about 18 minutes or until the tops got golden.
  5. Allow to cool completely before putting frosting on top.
Instructions for icing:
  1. What I did was mix everything together in a bowl at once until it was nice and creamy!.. pretty straight forward.. I know I am so complicated... I am not the queen of sarcasm...
Once your cupcakes are cooled and your icing is made, just ice them.. and eat them!!! I put sprinkles on top because it made them look even awesomer. ☺
This was also a very easy recipe for my son to help with. He LOVED being able to help me dump all the ingredients in a bowl and what not.

Corned Beef and Cabbage

Well, its St. Patricks day... so I decided to try my hand at making corned beef and cabbage. I have never made it before but I was very very pleasently surprised with how it turned out. Meaty Deep Dish Pizza

Tonight I was thinking PIZZA! Its the weekend, me and my husband had some episodes of Master Chef to catch up on.. so whats better than pizza?! As you can see in this picture.. there was some dough hanging over the edges.. I cut it off. This is what it looked like cut off so I decided to fold it down so the pie would look prettier.
