Cheesy & Spicy Grilled Cajun Chicken

This is the recipe for the super yummy cajun chicken that I had with the roasted mashed potatoes. This chicken is nice and spicy, but is toned down a little with the cheese on top. So.. lets get down to business! Makes about 5 servings if each person has 2 pieces of chicken (yes yes I know in the picture there are 4 pieces on the plate.. I didn't finish it all because I was stuffed like a turkey) Ingredients: 10 thawed out chicken tenderloins 1 Tbsp olive oil 2 Tbsp Cajun seasoning 1 tsp sea salt 1 cup shredded mozzarella cheese Instructions: Take your thawed out chicken and place it in a bowl. Add your olive oil, Cajun seasoning, and salt to the bowl and toss/mix (whateva) until the chicken is nicely coated with the seasonings. Now cook on the grill... Super Amazing Roasted Mashed Potatoes

Tonight I knew I was making something with corn.. I love corn. And what goes better with corn than mashed potatoes?! I love eating a bite of mashed potatoes and corn all in one go. I have an amazing recipe for roasted potatoes.. and I thought to myself.. "hmmm what if I skinned them and then mashed them" and holy moly.. they turned out AMAZING!!! Now that I had a chance to actually cook something I decided I would try out some cinnamon rolls! I had a great recipe for dough.. but I wasn't really sure what the best kind of filling would be (obviously something sweet). So I was kneading out my dough and my Dad walked in and said something along the lines of, "oh boy, your grandma used to make THE best cinnamon rolls ever", so obviously I gave her a call. She told me what she put inside of hers, and I went to work! And I need to just go ahead and say.. that I call my grandma pretty much any time I need advice on baking.. she is amazing. Vanilla Cupcakes with Chocolate Frosting!

I made these about a week ago and I forgot that I took pictures! This was my very first attempt at making homemade cupcakes without a cake mix from a box. And I am going to be honest.. they were pretty freaking amazing. Now.. enough talk.. lets get to the sweet goodness! I added a little more vanilla extract and it turned out amazing. Teriyaki Glaze/Marinade

Tonight I came up with a super yummy recipe for a teriyaki glaze. It can also be used as a marinade. I simply drizzled it over some chicken and it turned some slightly overcooked chicken (I lost track of time) into some super yummy chicken. Enough talk.. lets get to the good stuff! Ingredients: 1/2 cup soy sauce 1/2 cup granulated sugar 1 Tbsp minced garlic 2 dashes of ground ginger (I have one of the little containers of ground ginger and just shook it in the bowl twice...) If I HAD to put a measurement on it I would say probably 1/2 or so of a teaspoon Instructions: 1. Whisk it all together! its as simple as that! Spicy Thai Noodles

I came up with this recipe quite a while ago and it has been tried and tested many times. It is a favorite in my house, and in the houses of a few of my friends and family.  I had found a recipe for Thai noodles on Pinterest and it was horrible. It was flooded in oil, and was super bland. But it gave me an idea for what kind of flavors WOULD be good in it. So this is what I came up with! Be warned its a little spicy! Ingredients: 1 box of angel  hair pasta 2 Tbsp sesame oil 1 tsp red pepper flakes 6 Tbsp soy sauce 6 Tbsp honey 1-2 chopped green onions 1 Tbsp chopped peanuts 1 Tbsp sesame seeds Instructions: Get some water boiling and cook your pasta put your oil and red pepper flakes in a small sauce pan and cook on med-low for about 5 minutes. Be careful to not burn the oil. Once its done cooking and getting all nice and spicy you will want to strain out the red pepper flakes and put the, now spicy, oil in a bowl. Today was one of those days where I just felt like I needed a freakin' chocolate chip cookie. After doing a bunch of research on what makes the best chocolate chip cookie.. and seeing about a million recipes... I came up with this deliciousness. They were getting eaten as I was setting them out to cool, I doubt there will be any left for me by the time I am done typing this. So I am going to hurry and get to the good stuff! Ingredients: ½ cup cold butter cut up and cubed ¼ cup room temperature butter ¾ cup lightly packed brown sugar ½ cup white sugar 1 egg + 1 egg yolk 2 tsp vanilla extract 2 ¼ cups of all purpose flour 1 tsp. baking soda 1 ½ tsp corn starch  ½ tsp salt 1 cup of chocolate chips Instructions: 1. First you will want to take your cubed cold butter, room temperature butter, egg, extra egg yolk, and granulated sugar and mix it together for a bit until the chunks of cold butter start to get smaller and smaller. Meaty Deep Dish Pizza

Tonight I was thinking PIZZA! Its the weekend, me and my husband had some episodes of Master Chef to catch up on.. so whats better than pizza?! As you can see in this picture.. there was some dough hanging over the edges.. I cut it off. This is what it looked like cut off so I decided to fold it down so the pie would look prettier. Ready for the oven! All popped out of the pan and ready for devouring.  Sooooooooooo good! I was worried that it was going to be soggy once I cut into it but that liquid was the only bit that was in there.. it was not soggy at all I promise.. it was amazing. I had some spring form pans that I hadn't used yet, and thought it would be a great recipe to test them out with. Daddy's Sunday Pancakes

This is the recipe my dad used to make us all the time when we were younger. EVERY Sunday he would wake us up early and make us pancakes, eggs, and bacon. We get this special syrup from our family back in Maryland. I don't think they sell it anywhere in Utah. It's a shame.. because this is the worlds most amazing syrup.. I love love love it! My grandparents ship it out to us in boxes because we love it so much. It is definitely my favorite thing to top off the amazing pancakes. Anyways... the recipe! ☺ Ingredients: • 4 cups of flour • 6 tsp baking powder • 1 tsp salt • 2 Tbsp sugar • 4 eggs • 2 ½ cups of milk Instructions: 1. Mix everything together 2. Cook on a skillet or frying pan (whatever works) until bubbly. I find that cooking it on medium heat works best. And as soon as it is getting pretty bubbly just flip it! 3. Caramelized Onion, Bacon Burger of Joy

Today I decided that I wanted to make a burger with a little extra kick compared to your average "on the grill" burger. And I came up with this! It was freaking amazing and I will totally be making it again! ☺ First off.. you gotta caramelize some onions! Just throw a little butter in a pan and get them nice and golden and sweet. Cook up some bacon! I used two slices per burger.. but you can always use more. I also bought the super affordable bacon.. but you are more than welcome (obviously) to use a thicker cut or whatever kind you want. Steak cut fries make a super awesome yummy side to this. I seasoned mine up with a little seasoning salt. But yet again.. you can season with whatever you like. These were also really yummy as a side. They were a little spicy and super delicious. Individual Apple Pie

This is a super simple way to make individual apple pies. They are flakey and soft with a delicious apple pie filling! First you will want to peel and chop up 3 apples. I used Gala apples but I think it would be just as good, if not better with Granny Smith apples. Then you will want to mix in some nutmeg, cinnamon, sugar, and flour. Then you are going to want to open up a can of flaky biscuit dough. I got the jumbo ones, so there were 8 in each can. You are going to want to split those in half , it should peel apart pretty easily if they are still cold. Flatten one of the halfs and then put some of the apple mixture in the middle. Flatten out the other half of the dough and place it over the top, use a fork to press the sides down and together. Then you are going to take some unsalted butter and smear it over the top of your pies. Then sprinkle some cinnamon and sugar mixture over top. Bake them in the oven at 350° for 15 minutes!
