Low Calorie Spaghetti Squash with Chicken and Tomato Sauce

So.. I am very happy to say that after a full week of dieting I have lost 5 pounds! Now don't freak out and think i'm starving myself.. I always tend to loose a lot right at the beginning of my diets.. then it ends up only being about a pound or two once I get  a few weeks into it. I started out at 239 and after weighing myself this morning I am down to 234! YAY!



Anyways.. Tonight for dinner I made myself some spaghetti squash with chicken and red sauce. I LOVE spaghetti squash because it has very little calories and you can easily use it in place of pasta for most dishes. The total calories for this ENTIRE dish was only 220 calories.

Lets get to the good stuff!

Seed your spaghetti squash

salt and pepper it

season and cook your chicken

add your tomato sauce

use a fork to "fluff" up the edges and get all the yumminess out of there

This recipe only makes enough for one serving.. but its super easy to make more.

Ingredients:

  • ½ spaghetti squash seeded (30 calories for .25 lbs. I think this serving was about 40 calories)
  • 2 chicken tenderloins (100 calories for two)
  • Italian seasoning
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • 1 cup tomato sauce (80 calories)
Instructions:
  1. So, first we have to cook the spaghetti squash. Even though this recipe only calls for ½ I cook both sides the same time I just save the other half for the next day or later in the day. To cook the spaghetti squash you want to cut it in half lengthwise, seed it and lay it on a baking sheet. Scoop out all of the seeds with a spoon. Salt and pepper it to your taste. Bake at 350° for 45 minutes. You will want to let it rest for about 5 minutes before you serve.
  2. Spray a skillet with some non stick spray and put your chicken tenderloins on. Spray a little non stick spray on the top of your chicken so the seasonings stick. Add your Italian seasoning, garlic and onion powder, and salt and pepper to taste. I like to go a little heavy on the seasonings so its super super flavory. I cooked mine at high heat and added a little water every so often with a lid on the top to steam it. Just make sure your chicken isn't sticking. If the pan is starting to look dry, add a little more water.
  3. Once your chicken is cooked, add the tomato sauce and let the sauce get all nice and hot.
  4. Serve your chicken and tomato sauce on top of your spaghetti squash and enjoy!
The spaghetti squash should just be slightly crunchy not soggy (or at least thats how I like it). This is a super yummy dinner and for only 220 calories for the whole thing.. who couldn't enjoy that?!

Meaty Deep Dish Pizza

Tonight I was thinking PIZZA! Its the weekend, me and my husband had some episodes of Master Chef to catch up on.. so whats better than pizza?!
