Vincent eating a warhead

Ok... so I know I haven't posted on here in a while. I have been crazy crazy busy this month. I have dressed up in Halloween costumes on 6-7 different occasions along with 2 kids. And let me tell ya.. it takes all the energy out of you. This year my son FINALLY was a Hobbit and my girlie pie was a fairy princess!


ANYWAYS... Tonight was Halloween and we did some trick or treating. At first when we went out my little (now 3 year old! He just had his birthday yesterday!) guy, he was so tired he started falling asleep while trick or treating. So I gave him an hour or so to get a second wind and took him out again. He got lots more candy and we came home once he was satisfied. He then preceded to take a nap (which I thought was bedtime) and he woke up at 11:30 at night. SO we are going to be up super super late. BUT it payed off because I got the best belly laugh I have EVER had. Out of all the candy he had in his bucket.. he decided to pick out the warhead. Now, if any of you have ever eaten this candy.. you know it is DISGUSTING! It is THE most sour thing I have ever tasted and I hate them.. I think most people dislike them because they are so freaking sour. Anyways.. I shouldn't have opened it for him.. but the evil part of me wanted to see his reaction. So I gave it to him.. and video taped it... lets just say I honestly don't think I have ever laughed so hard in my entire life.

Soft and Chewy Chocolate Chip Cookies

Today was one of those days where I just felt like I needed a freakin' chocolate chip cookie. After doing a bunch of research on what makes the best chocolate chip cookie.. and seeing about a million recipes... I came up with this deliciousness. They were getting eaten as I was setting them out to cool, I doubt there will be any left for me by the time I am done typing this. So I am going to hurry and get to the good stuff! Ingredients: ½ cup cold butter cut up and cubed ¼ cup room temperature butter ¾ cup lightly packed brown sugar ½ cup white sugar 1 egg + 1 egg yolk 2 tsp vanilla extract 2 ¼ cups of all purpose flour 1 tsp. baking soda 1 ½ tsp corn starch  ½ tsp salt 1 cup of chocolate chips Instructions: 1. First you will want to take your cubed cold butter, room temperature butter, egg, extra egg yolk, and granulated sugar and mix it together for a bit until the chunks of cold butter start to get smaller and smaller. Cheesy Knot Rolls

I served these delicious cheesy knot rolls with corned beef and cabbage. You can find the recipe for that here http://cookingforthemonster.blogspot.com/2014/03/corned-beef-and-cabbage.html I decided to try making some cheesy "Celtic Knot" rolls with our St. Pattys day dinner. And they turned out amazing! I took a basic bread dough recipe that I use and turned it into something fantastic. So.. here ya go Makes about 8 large knot rolls Ingredients: 6 cups of flour 2 cups warm water 2 packets of quick rise yeast 2 Tbsp softened butter 1 cup finely shredded cheddar cheese + extra for sprinkling 1 Tbsp oil 1 egg white 1Tbsp water Instructions: Mix together 2 cups of flour, your yeast, and your 2 cups of warm water. Quickly mix it together and let it rise for 5-8 minutes.  Now mix together the rest of your 4 cups of flour, your salt, and your 1 cup of cheese.
